The owner-chef Shota Sato spent more than 10 years in Sydney, Australia and started this wine dining restaurant to bring the excellence of Australian food and wine to the table using fresh ingredients from his family owned Shimode Nousan, and surrounding farms, and to create a place where everyone can spend time with a smile.

Shota Sato

Chef Shota born in Chiba, Japan. After training at various hotels in Japan, he moved to Australia in 2009, and after 3 years of training, he became the head chef at famous chef Hamish Ingham's "BarH".
The following year, 2015, he received numerous awards including "Gault & Millau 3 hats", "Good Food Guide by Morning Herald 1 hat", and "Best dish of the year no.4".
In 2019, he moved to Kaga, Ishikawa, where his wife's farmhouse is located.
He has started to work at "Spanish Bal Carmen" in Nomi City.
He was chosen to represent Ishikawa Prefecture in TV Asahi's "Chef-1 Grand Prix 2021". He made it to the top 16.
